Mediterranean Confetti Couscous 

Follow the Mediterranean cooking trend and you will find foods that are fresh, healthy and absolutely delicious.  This simple side dish is bursting with flavor and so super easy to prepare you can serve it any night of the week.

Ingredients:
  • 1 10 oz carton of couscous with pinenuts
  • 1 14-oz can of low sodium vegetable broth
  • 1/2 cup frozen peas
  • 1/4 cup loosely packed marinated sundried tomatoes
  • 1 14-oz can quartered artichoke hearts, drained
  • 1/4 cup crumbled feta
 
 
 
Prep Intructions:

1   POUR vegetable broth and seasoning packet from couscous (if there is one) into small sauce pan.  Place on high heat and bring to a boil.


2   ADD couscous and frozen peas.  Stir well.  Cover pot with lid and remove from heat.  Let sit for 5 minutes. 

3   DICE sundried tomatoes.

4   After couscous  has sat for 5 minutes, ADD quartered artichoke hearts and sundried tomatoes to pan and STIR with a fork until well incorporated.

5   ADD crumbled feta and lightly STIR again with fork.


6   SERVE and enjoy!

Prep Time: 10 minutes

Serves: 4-5 side dish servings

 
 
 

 
 Cooking Notes:
